Can I Eat This? - Chinese Broccoli

This veggie is gonna rock yo world
Dear future me - if you are reading this years from now, know that this was written during what I am now calling the Quaronavirus Era. This was a time when we were all asked to self-quarantine as much as possible, ‘social distancing’ became the new in-vogue phrase, and toilet paper briefly became more valuable than gold. But if there was a glimmer of light in this pandemic, it’s that many more people have started cooking on their own and trying new foods. Friends who I have never seen express an interest in cooking or baking have begun making beautiful dishes (And I couldn't be happier).

So what does Coronavirus have to do with Chinese Broccoli you may be wondering? Well, as long as everyone is eager to become the captain of their kitchen and until we can freely socialize again, I’m going to encourage you to keep trying new foods, and especially new vegetables. While many asian vegetables can be hard to find in your local Safeway or Kroger, a growing exception is Chinese Broccoli. This hearty green vegetable is becoming readily available in most supermarkets and is a delicious, easy to prepare way to get your 5-a-day. So while we're all stuck indoors, why not try out something new while you have the extra time?

Let’s dive in.

Drink Me: The Hot Toddy

One of the things I most look forward to in the year is slowing things down come December and enjoying what the start of winter has to offer. I take time to breathe in the cool air, smell the distant scent of a wood fire, and of course, enjoy all the foods and drinks of the season.

There's plenty of food that I love making when it's cold out, but instead of that, I'm going to focus on a drink in this post instead. Now before you close this tab and return to browsing quizzes on Buzzfeed or scrolling through Reddit, indulge me for a moment. One of my favorite drinks of the season is a steaming hot toddy. You know, that hot alcoholic drink in a mug you remember your parents, uncles, and aunts often drinking after dinner and subsequently fall asleep on the couch to? That one.

Despite it’s old-folks reputation and association, the hot toddy is a killer drink. Warming, sweet, and akin to a fleece throw blanket wrapped around a golden retriever in front of a fireplace level of cozy, you should be making one tonight and again all winter long.

Let’s look at how

When I’m in doubt of what to make for dinner or simply just don’t have the time or energy to cook something that requires more than half of my brain power, I usually default to one thing - Japanese Curry. You may be thinking, “what makes Japanese curry so special?” or “what is Japanese curry?” or “Why is Phil taking up so much time in this intro? I just want the dang recipe.” Well, this time, there is not really much of a recipe (you can see the back of a box of Japanese Curry Blocks for that), but I will tell you why it’s a hidden gem of an ingredient, some tips to make the most of your curry, and a little history. Hopefully after reading this, you will keep a watch for Japanese curry blocks then next time you go grocery shopping and get some to keep in your pantry for one of those days when you need something quick and easy.

Let’s dive in.

Back to Basics - Roast Chicken

Smells like falling leaves, infinity scarves, and apple picking
It may still be occasionally hitting 90 degrees outside, but gosh darnit, it’s autumn and that means it’s pumpkin sp...err roasted food season. Yes, you can argue that any time of year can be roasted food season, but even I have to admit that heating up your house by cranking up your oven when it’s hot out does not a happy camper make - even less so if you don’t have air conditioning.

But autumn is here, the flannel is being pulled out from the backs of closets, and Starbucks is parading their pumpkin based treats, so we can officially start roasting again without guilt. For me, one of the most quintessential autumn dishes is a perfectly roast chicken with vegetables and crusty bread. Not only is it delicious, but it’s also impressive to look at, and is an extremely affordable way to feed a small group (often for less than $10). So to welcome the new (and best) season, let’s tackle our next back to basics topic: Roast Chicken.

Can I Eat This? - Chickpeas

The possibilities are endless! Endless!!!
As of two days ago, Summer 2019 officially kicked off. That means tanks, swimsuits, flip flops, and too many posing on a unicorn floaty in a pool pics in our Instagram feeds. So while we all take some time to enjoy the warm and sunny weather, the heat also means I’m looking for easy to prepare dishes that will keep me full but not heat me or my kitchen up (at least not too much).

This usually means summer is also salad season, but while I love me a good salad every now and then (heyyy Harvest Bowl @ Sweetgreen), sometimes I want something a little more substantial than your normal bowl of greens. For me, that means looking at how to incorporate plant based protein and veggies into my diet that require minimal cooking. I’ve turned to chickpeas as one of my go-to sources of summer protein as a result. Not only are they quick and easy to prepare, but they are also cheap, protein and fiber packed, and easy to dress up and flavour every which way you want. Sounds good, no?
